Earl Grey cake recipe

Ingredients

  • 200 g softened butter
  • 180 g sugar
  • 3 eggs
  • 200 g flour
  • 1 sachet of baking powder
  • 2 Earl Grey tea bags (or 2 tsp loose leaves)
  • 10 cl milk
  • Orange or lemon zest (optional)
  • 1 pinch of salt

Method

  1. Preheat the oven to 180°C.
  2. Heat the milk, then infuse the Earl Grey tea for 5 to 10 minutes. Strain.
  3. Whisk the butter and sugar until creamy.
  4. Add the eggs one at a time, mixing well.
  5. Fold in the flour, baking powder and salt.
  6. Pour in the infused milk (and zest, if used), then mix until you have a smooth batter.
  7. Pour into a buttered tin and bake for 35 to 40 minutes.
  8. Leave to cool before removing from the tin.

Tip: you can add an icing (icing sugar + lemon juice) for an even more indulgent cake.
