Earl Grey cake recipe
Ingredients
- 200 g softened butter
- 180 g sugar
- 3 eggs
- 200 g flour
- 1 sachet of baking powder
- 2 Earl Grey tea bags (or 2 tsp loose leaves)
- 10 cl milk
- Orange or lemon zest (optional)
- 1 pinch of salt
Method
- Preheat the oven to 180°C.
- Heat the milk, then infuse the Earl Grey tea for 5 to 10 minutes. Strain.
- Whisk the butter and sugar until creamy.
- Add the eggs one at a time, mixing well.
- Fold in the flour, baking powder and salt.
- Pour in the infused milk (and zest, if used), then mix until you have a smooth batter.
- Pour into a buttered tin and bake for 35 to 40 minutes.
- Leave to cool before removing from the tin.
Tip: you can add an icing (icing sugar + lemon juice) for an even more indulgent cake.
