What is hojicha?

Hojicha is a Japanese roasted green tea, usually made from the stems and veins of teas like bancha or sencha. Created in Japan in the 1920s, it fits into a zero-waste approach by utilizing parts of the tea plant that are usually discarded. After high-temperature roasting followed by fine grinding, it develops an amber-brown color with gentle roasted, woody, cocoa, and hazelnut notes.
