So if white tea requires fewer manufacturing steps, why is it so popular? Well it’s because these two phases are carried out progressively, at the rhythm of the natural evolution of the leaves. Neither roasted nor rolled, white tea is handled so little that it has only undergone slight oxidation, only on the surface. And that’s precisely what makes it valuable. The liqueur of white tea, pale yellow in color, offers sweet floral notes on the palate, imbued with freshness and refinement. The Chinese particularly appreciate it in summer in their teapot, when they enjoy it to quench their thirst as an infusion.
