Ingredients (for 8 to 10 portions)
- 200g white chocolate
- 120g butter
- 2 eggs
- 120 g of sugar
- 150 g of flour
- 2 tablespoons of powder of matcha
- 1 pinch of salt
- Optional: 50 g white chocolate chips or macadamia nuts
Preparing the Brownie matcha
1. Preheat the oven
Preheat your oven to 170°C. Line a square mold of approximately 20 cm with baking paper.
2. Melt the white chocolate
In a saucepan over low heat or in a bain-marie, melt the white chocolate with the butter. Mix until smooth.
3. Prepare the device
In a salad bowl, whisk the eggs with the sugar until the mixture is homogeneous. Then add the melted chocolate-butter mixture.
4. Add the dry ingredients
Sift together the flour, matcha and salt. Pour them gradually into the preparation and mix gently.
Add white chocolate chips or nuts if desired.

5. Bake
Pour the batter into the mold and smooth the surface.
Cook for 22 to 25 minutes. The center should remain slightly soft to maintain the characteristic texture of the brownie.
6. Let cool
Remove the brownie from the oven and let it cool completely before cutting it into squares.
Additional tips:
Choose one matcha quality
A matcha Culinary or premium grade will provide a brighter color and less bitter taste.
Don't overcook the brownie
Cooking for too long risks making it dry. Check the cooking with the tip of a knife: it should come out with a few moist crumbs.
Add some crunch
Macadamia nuts, flaked almonds or even pistachios go perfectly with the matcha.
