The info you need

The roots and leaves of the cassia (cinnamon tree) are edible, but its bark is what most people are interested in! This part is harvested during the rainy season and left to dry. It naturally rolls into a cylinder to create the sticks we all know and love. The most sought-after cinnamon is found in Sri Lanka. Many years ago on the island, this spice was so sacred that only one caste, the Salagamas, were allowed to grow or touch it!
