HOW TO BREW WHITE TEA CORRECTLY?

As it's rare, refined and not always easy to find, it would be a shame to go wrong when brewing white tea. Here are our tips for brewing and enjoying the perfect cup of white tea.


Which teapot to use?


If apart from white tea you also drink green and black tea, you will need a teapot that doesn't have a 'memory', which is the case for most of them (including glass, cast-iron, and ceramic teapots). Only unglazed earthenware teapots retain the flavours from one brew to the next. They are not recommended for white tea because tannins in green and black tea could overpower the delicate flavour of white tea. If you would like to find out more, read our teapot guide.


How long should white tea be brewed?



Experts recommend that the brewing time for white tea be between 2 to 3 minutes. Under-brewed? White tea may taste bland and lack flavour. Over-brewed? It has the advantage of not being too astringent or bitter, unlike green tea. Place the tea in hot but not boiling water, ideally between 70 and 80 degrees. A higher brewing temperature runs the risk of damaging white tea's subtle flavours and vitamins. All white teas are not identical, of course – some are blended with other flavours – so make sure to follow the instructions on the box. 


What is the best time of day to drink white tea?


White tea will always keep you company during your breaks: from early in the morning, at breakfast and brunch, but also during afternoon tea. It can be enjoyed hot in winter, but also as iced tea in summer. To make iced white tea, let it steep in cold water in the fridge overnight or brew it in hot water and then cool it down with ice cubes. You should use around five tablespoons of white tea for one litre of water.


Does white tea disrupt sleep? 


Are you worried that the theine in white tea will disrupt your sleep? Rest assured: the amount of theine in white tea is usually lower than in other types of tea. Not to mention much lower than in a cup of coffee! That's right, theine and caffeine are exactly the same molecule. This means that you can drink it in the afternoon or evening without any qualms. White tea (and tea in general) is a relaxant for the body rather than a stimulant (a property that coffee is famous for).
