| Salmon in Samovar tea sauce |

| - 4 pieces of salmon weighing about 150 g - 250 ml of whipping cream - 5 g of Samovar tea - salt, ground pepper |
- 500 g of fine green asparagus to serve alongside |
Method
Pour the cream into a pan and bring to the boil. Add the tea, allow to cook on a low heat for 3 minutes, then remove from the heat, add salt and pepper and leave to infuse for 10 minutes.
Remove the hard part of the asparagus and wash the tips. Cook them in salted boiling water for 7 minutes then drain them and keep them warm.

Samovar tea is mildly smoked. For a stronger taste, you could choose the Lapsang Souchong N°210.
