- 1 tablespoon of loose green tea
- 225 ml of boiling water
- 1½ tablespoons of sesame oil
- 500 g of large fresh prawns
- 1 tablespoon of saké or sherry
- 1 tablespoon of curry powder
Method
Place the tea leaves in a heatproof measuring jug and pour over the boiling water.
Leave to brew for 15 minutes.
Heat the oil in a frying pan until it gets very hot.
Add the prawns, curry powder and saké or sherry and allow to cook on a high heat for 1 minute, stirring constantly.
Add the tea and about half the tea leaves and leave to cook for another minute.
Remove the prawns from the pan with a skimmer and place them on a hot serving dish.
Reduce the sauce to 150 ml by cooking on a high heat.
Pour over the prawns through a sieve and serve immediately.
Tips :
You can eat this dish as a starter, or as a main course with rice.
