| Madeleine cakes with tea |

Ingredients |

| - 1 tablespoon of Jasmine green tea - 100 g of flour - 80 g of butter - 40 g of honey |
- 60 g of sugar - 1/2 teaspoon of yeast - 2 eggs |
Method
Infuse the tea in 100 ml of water at 85°C for 5 minutes. Then bring to the boil for 3 minutes.
Add the butter, allow to melt and remove from the heat.
Cream the sugar and the eggs, beating until the mixture turns paler.
Add the flour and the yeast. Mix together.
Pour in the tea/butter preparation, then the honey, and mix again.
Butter the cake moulds (or use silicone moulds), divide out the mixture, place in the oven on gas mark 4 (about 120°C) and bake for 12 - 15 minutes.
