| Apple compote with tea and cinnamon |

Ingredients |

| - 1 kg of apples - 200 g of sugar - 2 cloves - 1 stick of cinnamon - 1 sachet of vanilla-flavoured sugar |
- 1 tablespoon of Ceylon tea (or Prince Vladimir or Kashmir Tchai) - ¼ litre of water |
Method
Heat the water to 85°C and steep the tea, cinnamon and cloves in it for 5 minutes.
Meanwhile, peel the apples, remove the pips and the core, cut them in four.
Strain the tea preparation and put it in a pan with the sugars, the apple quarters, the cinnamon and the cloves. Bring to the boil, then lower the heat and leave to simmer gently.
To check whether the compote is cooked, push a fork into the fruit which should be soft and pierce easily.
Remove the cinnamon and cloves.
Serve warm or very cold, accompanied with yoghurt or crème fraîche and decorated with flaked almonds which have been dry toasted in a pan.
