Sorbet with peaches and Lemon-Ginger green tea

Ingredients
  - 800 g fully ripe peaches
- 150 g icing sugar
- 5 g of Lemon-Ginger tea
 

Method
Brew the tea in 100 ml of boiling water, strain and set aside to cool.
Dip the peaches into boiling water to make them easier to peel. Remove their stones and cut them into pieces. Add the tea and icing sugar. Reduce to a purée in a blender.
Leave to solidify in the freezer for 2 hours. Stir to break up the ice crystals. Put back into the freezer for 12 hours.
Can be served with mint leaves and redcurrants.
