Darjeeling Sabayon
For 6 people
 
Preparation time : 10 minutes
Cooking time : 5 minutes

Ingredients
  - 6 egg yolks
- 120 g of caster sugar
- 5 g of Darjeeling N°37 tea
 

Method
Heat 150 ml of water to 85°C; pour in the tea and leave to infuse for 3 minutes, then strain.

In a pan or a basin, beat the egg yolks with the caster sugar until the mixture turns paler.

Light the stove and place the pan or basin over a bain-marie on a high heat.

Carry on beating until the mixture becomes foamy and doubles in volume, while incorporating the tea. Make sure you don't allow it to boil.

Remove from the heat as soon as the cream reaches a nice smooth consistency. Divide it into ramekins.

Serve warm or cold with ginger biscuits.
